The AIFST Bruce Chandler Literature Award 2026

This award recognises the authorship of books or substantial reviews deemed to have made the most significant contribution to food science and technology. 

The award is named in honour of AIFST Past President, Bruce Chandler, who had a long association with the journal food australia, first as an Associate Editor then member of the Editorial Board between 1969 and 1978.

Notably he was Literature Editor for 12 years from 2001, a function which he performed with extreme dedication.

The 2026 award winner is 'Hard-to-cook phenomenon in common legumes: Chemistry, mechanisms and utilisation', authors: Dilini Perera, Lavaraj Devkota, Gil Garnier, Joe Panozzo, Sushil Dhital.

This comprehensive review provides a valuable update around a challenging aspect of the science and technology of grain legumes, which continues to impact on their wider utilisation as highly nutritious foods.  The review covers current knowledge of the science underlying the development of hard-to-cook phenomena in a range of grain legumes, as well as some processing strategies used to help overcome the problem.  

The review was published in Food Chemistry (2023) and was undertaken as part of a collaborative research project between Monash University and Agriculture Victoria Research, funded through the ARC Linkage Scheme.
