The book has grown significantly in stature and size since its beginnings as a laboratory manual in 1974. The field of food microbiology has developed enormously since the first publication was conceived, which change has been reflected in each subsequent edition.
Building on the fifth edition, the 752 page sixth edition has been completely updated and revised. More than 50 of Australia’s leading food microbiologists have contributed 27 chapters ranging from Food safety and testing in perspective through to Parasitology of foods. New co-authors have joined the project and four new Chapters have been added.
